How it starts

Planted by hand, watched all season.

Priddles Garlic is a family-run farm growing garlic in the fertile hinterland of the NSW South Coast. Each season we plant our cloves by hand, tend them through the cooler months, and wait for the crop to tell us when it's ready — not the calendar.

It's slower than large-scale imported production, and that's exactly the point: time in the ground is what builds the flavour that ends up on your plate.

How it finishes

Cured slowly, never rushed to market.

After harvest, our garlic is hand-pulled and left to cure properly before it ever reaches a bag — no chemical fumigation, no bleaching to make it look uniform, just time and airflow doing the work.

How our garlic gets to you

Plant

Individual cloves are hand-planted across our hinterland paddocks each cooler season.

Grow

Crops are tended by hand through the growing months — no shortcuts, no rushing nature.

Harvest & cure

Bulbs are hand-pulled at peak maturity, then left to cure slowly and naturally.

Pack & ship

Once cured, garlic is sorted, packed and shipped fresh direct from the farm to you.

Head Harvester and the Brawn

Michael's out in the paddock from first light — planting, weeding and hauling in the harvest, rain or shine. If it's hard yakka, it's his job.

Lizzy keeps the whole operation running — curing, packing, and making sure every order actually gets where it's going. Ask her anything; she'll know the answer.

The furry companion

Teddy supervises every job on the farm from a safe distance, mostly from whatever patch of sun he's claimed for the day. Morale officer, first to greet every visitor.

Good to know

Best time to see the garlic in the ground

Our cloves go in during autumn, then spend the cooler months pushing up rows of green, strappy leaves — that's the view in most of our farm photos. The best time to see the crop actually growing, rather than already harvested, is winter through to early spring, roughly June to October, before we bring the harvest in over summer.
